Ya, just pinch out the stamens and cut the flower off the stalk. They taste like sweet lettuce. I love the plantaginea varieties...unfortunately, so do the slugs!
I didn't know that about hosta flowers! They are pretty, and ones in the H. plantaginea family have a wonderful fragrance.
